4 tablespoons cowboy butter (homemade or store-bought)

1 cup heavy cream

1 cup shredded cheddar cheese

2 cloves garlic, minced

1 red bell pepper, diced

½ cup corn (fresh or frozen)

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh cilantro or parsley, chopped (for garnish)

Cook the linguine pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    In a large skillet over medium heat, melt 2 tablespoons of cowboy butter. Add the diced chicken and season with salt, pepper, smoked paprika, and cayenne pepper. Cook until the chicken is golden and cooked through, about 5-7 minutes.

      Add the minced garlic and diced red bell pepper to the skillet, cooking for another 2-3 minutes until the pepper softens.

        Reduce the heat to low and stir in the heavy cream and remaining 2 tablespoons of cowboy butter. Bring it to a gentle simmer, allowing the mixture to thicken for about 3-4 minutes.
