12 oz rigatoni pasta

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon nutmeg (optional)

Fresh basil, for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions (about 12 minutes) until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sauté the Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Create the Cream Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese gradually, mixing until the cheese has melted and the sauce is smooth.

        Add Spinach and Season: Stir in the chopped spinach, and cook for an additional 2-3 minutes until wilted. Season the sauce with salt, black pepper, and nutmeg (if using).

          Combine Pasta and Sauce: Add the cooked rigatoni to the sauce, mixing well to ensure the pasta is coated. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency.
