Ingredients
  

1 lb steak (sirloin or tenderloin), cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

1 cup heavy cream

1 lb potatoes, peeled and diced

1/2 cup milk (or more for desired consistency)

2 tablespoons sour cream

2 tablespoons chives, chopped (for topping)

Instructions
 

Prepare the Potatoes:

    - In a large pot, add diced potatoes and cover with cold water. Bring to a boil over medium-high heat and add salt. Cook for about 15-20 minutes, or until tender when pierced with a fork. Drain and return to the pot.

      Mash the Potatoes:

        - Add milk, sour cream, and a pinch of salt to the potatoes. Mash until smooth and creamy. Adjust the milk quantity for desired consistency. Set aside and keep warm.

          Cook the Steak Bites:

            - In a large skillet over medium-high heat, melt 2 tablespoons of butter. Season the steak pieces with salt and pepper, then add them to the pan in a single layer. Sear for about 3-4 minutes for medium-rare, turning occasionally. Remove the steak bites from the skillet and set aside.

              Make the Garlic Butter Sauce:

                - In the same skillet, reduce heat to medium and add the remaining 2 tablespoons of butter. Once melted, add minced garlic and rosemary. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

                  Combine with Cream:
