2 boneless, skinless chicken breasts

8 oz fettuccine or spaghetti pasta

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing into strips.

      Create the Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Sauté the minced garlic for about 1 minute until fragrant, being careful not to burn it. Pour in the heavy cream and stir, bringing it to a light simmer.

        Add Cheese and Vegetables: Stir in the grated Parmesan cheese, cherry tomatoes, and fresh spinach. Cook for about 2-3 minutes, until the spinach wilts and the sauce thickens slightly. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.

          Combine: Add the cooked pasta and sliced chicken to the skillet, tossing everything gently to coat in the creamy garlic sauce. Season with additional salt and pepper if needed.
