4 salmon fillets (about 6 ounces each)

2 tablespoons olive oil

1 cup cremini mushrooms, sliced

4 cloves garlic, minced

1 cup heavy cream

1 cup vegetable or chicken broth

1 tablespoon Dijon mustard

2 teaspoons fresh thyme, finely chopped (or 1 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley for garnish

Prepare the Salmon: Season both sides of the salmon fillets with salt and pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets, skin-side down, and cook for 4-5 minutes until the skin is crispy. Carefully flip and cook for an additional 3-4 minutes until just cooked through. Remove the salmon from the skillet and set aside.

      Sauté the Mushrooms: In the same skillet, add the sliced mushrooms and cook for about 4-5 minutes until they are browned and softened. Stir frequently to prevent sticking.

        Add Garlic: Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

          Create the Creamy Sauce: Pour in the vegetable or chicken broth and bring to a simmer. Stir in the heavy cream and Dijon mustard, then reduce the heat to low. Mix in the thyme and season with salt and pepper. Let the sauce simmer for about 5 minutes until it thickens slightly.

            Combine: Return the salmon fillets to the skillet, spooning the creamy mushroom sauce over them. Let them simmer together for another 3-4 minutes to meld the flavors.

              Serve: Once fully combined and warmed through, remove from heat.

                Garnish and Plate: Transfer the salmon fillets to serving plates, generously ladle the creamy garlic mushroom sauce on top, and garnish with fresh parsley.
