12 oz fresh ravioli (ricotta or cheese-filled)

2 tablespoons olive oil

1 cup heavy cream

1 medium lemon (zest and juice)

1/2 cup grated Parmesan cheese

1 teaspoon garlic, minced

Salt and pepper to taste

Fresh basil leaves, for garnish

Optional: Pinch of red pepper flakes

Cook the Ravioli: In a large pot of salted boiling water, gently add the ravioli. Cook according to package instructions (usually 3-5 minutes for fresh ravioli) until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the ravioli and set aside.

    Prepare the Sauce: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add the Cream: Pour the heavy cream into the skillet and bring to a gentle simmer. Reduce the heat and stir in the lemon juice and zest, allowing the flavors to blend for 2-3 minutes.

        Combine the Cheese: Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

          Season the Sauce: Taste the sauce and season with salt, pepper, and optional red pepper flakes to your desired heat level.

            Toss Ravioli: Carefully add the cooked ravioli to the skillet, gently tossing to coat evenly in the lemon cream sauce.

              Serve: Divide the ravioli among serving plates. Garnish with fresh basil leaves and additional Parmesan cheese if desired. Enjoy immediately!
