Ingredients

8 oz fettuccine or your favorite pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon fresh lemon juice

2 tablespoons fresh basil, chopped (plus extra for garnish)

Zest of 1 lemon

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the shrimp and cook for about 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, cherry tomatoes, and red pepper flakes. Season with salt and pepper to taste.

Combine the Pasta and Shrimp: Add the cooked pasta and shrimp to the sauce, tossing to combine. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

Finish the Dish: Stir in the lemon juice, lemon zest, and chopped basil. Adjust seasoning if needed.

Serve: Plate the creamy pasta and garnish with additional basil leaves. Serve immediately and enjoy!
