1 lb (450g) boneless, skinless chicken thighs, diced

2 cups wild rice, rinsed

8 oz (225g) cremini mushrooms, sliced

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

6 cups low-sodium chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

Fresh chives, chopped, for garnish

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are soft and the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Chicken: Add the diced chicken thighs to the pot. Season with salt, pepper, and dried thyme. Cook until the chicken is no longer pink, about 5-7 minutes.
