1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces cremini mushrooms, sliced

1 cup vegetable broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup baby spinach

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and sliced mushrooms, and cook until the mushrooms are tender and have released their moisture, about 7-8 minutes. Season with salt, pepper, and thyme.

      Add the orzo pasta to the pan and stir for 1-2 minutes to toast the pasta lightly.

        Pour in the vegetable broth and bring to a gentle simmer. Cook for about 10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed.

          Reduce the heat to low, then stir in the heavy cream and grated Parmesan cheese until smooth and creamy. Add the baby spinach and stir until wilted, about 2 minutes.

            Adjust seasoning with additional salt and pepper if needed.

              Serve hot, garnished with freshly chopped parsley on top.
