Ingredients

1 pound turkey sausage, casing removed

1 package (16 oz) frozen pierogi (your choice of flavors)

1 medium onion, diced

2 cloves garlic, minced

1 cup fresh spinach, chopped

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

Add the turkey sausage to the skillet, breaking it up with a wooden spoon. Cook for about 5-7 minutes until browned and cooked through. Season with salt and pepper.

Meanwhile, bring a large pot of water to a boil. Add the frozen pierogi and cook according to package instructions until they float to the surface, about 5-7 minutes. Drain and set aside.

Once the sausage is cooked, add the chopped spinach to the skillet and stir until wilted, about 2 minutes.

Pour in the heavy cream and bring to a gentle simmer. Stir in the shredded cheddar cheese until melted and the sauce is creamy.

Fold the cooked pierogi into the skillet and gently toss to coat them in the creamy sauce. Cook for an additional 2-3 minutes to heat everything through.

Taste and adjust seasoning if necessary, adding more salt and pepper as desired.

Serve hot, garnished with fresh parsley for a pop of color and freshness.
