Creamy Potato Leek Soup

4 large leeks (white and light green parts only), thoroughly cleaned and chopped

2 tablespoons unsalted butter

1 tablespoon olive oil

4 medium Yukon Gold potatoes, peeled and diced

4 cups vegetable broth (or chicken broth)

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

1 cup heavy cream (or coconut cream for a dairy-free option)

Fresh chives or parsley for garnish

Instructions
 

In a large pot, melt the butter and olive oil over medium heat. Add the chopped leeks and sauté for about 5 minutes until they become soft and translucent, but not browned.

    Add the diced potatoes to the pot, followed by the vegetable broth, dried thyme, bay leaf, and some salt and pepper. Stir everything together to combine.

      Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.

        Remove the bay leaf, and using an immersion blender, pureé the soup until you reach your desired consistency. If you don't have an immersion blender, you can carefully transfer the soup in batches to a regular blender and blend until smooth.

          Once pureéd, return the soup to low heat and stir in the heavy cream. Allow it to warm through, adjusting the seasoning with more salt and pepper if needed.

            Serve hot, garnished with freshly chopped chives or parsley.
