4 large Russet potatoes, peeled and cubed

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/4 cup milk

2 tablespoons unsalted butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup breadcrumbs (preferably seasoned)

Fresh chives, chopped (for garnish)

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain and return them to the pot.

    Mash the Potatoes: Add cream cheese, butter, and milk to the drained potatoes. Mash until smooth and creamy. Season with garlic powder, onion powder, salt, and pepper.

      Incorporate the Cheese: Stir in the shredded cheddar cheese until evenly melt and mixed into the potato mixture.

        Form the Puffs: Preheat your oven to 400°F (200°C). Once the potato mixture is cool enough to handle, scoop spoonfuls and shape them into small puffs (about the size of a golf ball).

          Coat with Breadcrumbs: Roll each puff in breadcrumbs until well-coated, then place them on a baking sheet lined with parchment paper.

            Bake: Bake the potato puffs in the preheated oven for 20-25 minutes or until they are golden brown and crispy on the outside.
