Creamy Ricotta Chicken Pasta

12 oz fettuccine or pasta of choice

2 boneless, skinless chicken breasts

1 cup ricotta cheese

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon olive oil

2 cups fresh spinach (or arugula)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package directions until al dente. Reserve 1 cup of pasta water before draining the pasta, then set it aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the pan and let it rest for a few minutes before slicing it into strips.

      Make the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Reduce heat to low. Add the ricotta cheese, heavy cream, and half of the Parmesan cheese, stirring until smooth. If the sauce is too thick, gradually add some reserved pasta water until you reach the desired consistency.

        Combine Everything: Add the cooked fettuccine to the skillet with the creamy sauce. Toss to combine, ensuring all the pasta is coated in the creamy mixture. Stir in the fresh spinach, allowing it to wilt slightly in the heat. Add sliced chicken on top of the pasta and gently mix.

          Serve: Plate the creamy ricotta chicken pasta, garnishing with the remaining Parmesan cheese and fresh basil leaves. Adjust seasoning with salt and pepper as needed.
