1 pound (450g) cherry tomatoes

2 tablespoons olive oil

Salt and pepper to taste

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

8 ounces (225g) pasta of your choice (fettuccine or penne works well)

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    On a baking sheet, spread out the cherry tomatoes. Drizzle with olive oil and sprinkle with salt, pepper, and red pepper flakes if using. Toss to coat.

      Roast the tomatoes in the oven for about 20-25 minutes until they burst and are slightly caramelized. Halfway through, add the minced garlic to the baking sheet.

        Meanwhile, cook the pasta according to package instructions in salted boiling water until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set aside.

          In a large skillet over medium heat, combine the roasted tomato mixture (including the garlic) with the heavy cream. Stir gently to combine and simmer for 2-3 minutes until slightly thickened.

            Add the cooked pasta to the skillet along with the Parmesan cheese, stirring well to combine. If the sauce is too thick, add reserved pasta water a little at a time until you achieve your desired creaminess.

              Taste and adjust the seasoning, adding more salt and pepper if needed.

                Serve immediately, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese on top.
