Ingredients

12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, casings removed)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup diced tomatoes (canned or fresh)

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for heat)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Cook the Rigatoni: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

Brown the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the Italian sausage. Cook until browned and cooked through, breaking it apart with a wooden spoon (about 5-7 minutes).

Sauté Onions and Garlic: Add the chopped onion to the skillet with the sausage. Sauté until the onion is translucent (about 3-4 minutes). Stir in the minced garlic and continue cooking for another minute until fragrant.

Create the Sauce: Pour in the heavy cream and diced tomatoes. Stir to combine, then add the Italian seasoning, red pepper flakes (if using), and season with salt and pepper. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.

Combine with Pasta: Add the cooked rigatoni to the skillet with the sauce. Toss everything together until the pasta is well coated. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.

Add Cheese: Stir in the grated Parmesan cheese until melted and incorporated into the sauce.

Taste and Adjust: Taste and adjust seasonings as necessary, adding more salt, pepper, or red pepper flakes according to preference.

Serve: Plate the creamy sausage rigatoni hot, garnished with fresh basil leaves and additional Parmesan if desired.
