12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Olive oil for cooking

Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente. Drain, reserving 1/2 cup of the pasta water, and set aside.

    In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.

      Add the minced garlic to the skillet and sauté for an additional minute until fragrant.

        Incorporate the Italian sausage into the skillet, breaking it into small pieces with a wooden spoon. Cook until browned and fully cooked through, about 5-7 minutes.

          Once the sausage is cooked, stir in the heavy cream, chicken broth, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a gentle simmer.

            Allow the sauce to simmer for about 5 minutes, stirring occasionally, until it thickens slightly.

              Stir in the grated Parmesan cheese until it melts smoothly into the sauce. Season with salt and pepper to taste.

                Add the cooked rigatoni pasta to the skillet and toss to combine, adding a little reserved pasta water if needed to reach your desired consistency.

                  Serve immediately, garnished with fresh basil leaves for a pop of color and freshness.
