12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, casings removed)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Red pepper flakes, for garnish (optional)

Instructions
 

Cook the Rigatoni: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Brown the Sausage: In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

      Add Garlic and Tomatoes: Stir in the minced garlic and cook for 1 minute until fragrant. Then, add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.

        Incorporate Spinach: Add the chopped spinach to the skillet. Cook until wilted, about 2-3 minutes.

          Create the Sauce: Lower the heat and pour in the heavy cream, mixing well. Stir in the Italian seasoning, Parmesan cheese, and season with salt and pepper to taste. If the sauce is too thick, add some reserved pasta water, a little at a time, until desired creaminess is achieved.

            Combine Pasta and Sauce: Add the cooked rigatoni to the skillet and toss well to coat the pasta in the creamy sauce. Allow everything to heat through, about 2-3 minutes.

              Serve: Remove from heat, garnish with fresh basil leaves and a sprinkle of red pepper flakes, if desired. Serve immediately while hot.
