250g pasta (fettuccine or spaghetti)

2 cups fresh spinach, chopped

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

1 teaspoon lemon zest

Salt and pepper to taste

Red pepper flakes (optional, for a kick)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Add Spinach: Add the chopped spinach to the pot and cook until wilted, about 2-3 minutes.

        Create the Cream Sauce: Lower the heat and pour in the heavy cream. Stir to combine, and let it warm just until it begins to bubble.

          Incorporate Cheese and Seasoning: Gradually mix in the grated Parmesan cheese and lemon zest until the cheese melts and the sauce is creamy. Add salt, pepper, and red pepper flakes if using, adjusting to taste.

            Combine Pasta and Sauce: Add the cooked pasta to the cream sauce, tossing gently to coat. If the sauce is too thick, add some reserved pasta water gradually until you reach your desired consistency.

              Serve: Plate the pasta and sprinkle additional Parmesan cheese if desired. Garnish with fresh basil leaves for a pop of color and flavor.
