Instructions
Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
Add the chopped spinach to the skillet and cook for 3-4 minutes, stirring until wilted.
Reduce the heat to low, then pour in the heavy cream and stir to combine.
Gradually stir in the grated Parmesan cheese until melted and creamy. Add the red pepper flakes, salt, and pepper to taste.
Toss the cooked tortellini into the creamy spinach sauce, stirring gently until well coated.
Remove from heat and let it sit for a minute to thicken before serving.
Notes
Serve in shallow bowls, garnishing with extra grated Parmesan and fresh basil leaves for a touch of color.
