8 ounces pasta (penne or fettuccine works well)

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon lemon zest

Salt and pepper to taste

1/4 teaspoon nutmeg (optional)

Toasted pine nuts for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add the Spinach: Stir in the chopped spinach and cook for 3-4 minutes, or until wilted.

        Create the Cream Sauce: Reduce the heat to low, then pour in the heavy cream. Stir and let it warm through for about 2 minutes.

          Mix in Cheese and Seasoning: Gradually whisk in the grated Parmesan cheese until melted and creamy. Add lemon zest, salt, pepper, and nutmeg (if using). If the sauce is too thick, slowly mix in a little reserved pasta water until you reach your desired consistency.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it evenly with the creamy sauce. Heat for another minute to let everything blend together.

              Serve: Plate the creamy spinach pasta and garnish with toasted pine nuts for added crunch and flavor.
