8 oz (225g) pasta of your choice (fettuccine or penne works great)

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

1 tablespoon olive oil

3 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

1/2 cup (75g) sun dried tomatoes, chopped (packed in oil, drained)

1/2 cup (50g) grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breasts, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Create the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any bits from the bottom of the pan.

        Add Cream and Tomatoes: Reduce the heat to low and stir in the heavy cream, sun-dried tomatoes, and Italian seasoning. Allow the sauce to simmer gently for about 5 minutes until slightly thickened.

          Combine the Ingredients: Return the cooked chicken to the skillet and add the drained pasta, tossing everything together until well-coated in the creamy sauce. Stir in the grated Parmesan cheese until melted and combined.

            Serve: Plate the creamy sun-dried tomato chicken pasta, garnishing with fresh basil leaves and additional Parmesan if desired. Enjoy warm!
