Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.

    In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

      Add the cherry tomatoes and cook for 3-4 minutes until they begin to soften.

        Stir in the spinach and cook until wilted, about 2 minutes.

          Reduce heat to medium-low and pour in the heavy cream. Stir to combine, allowing it to come to a gentle simmer.

            Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce thickens.

              Return the shrimp to the skillet, mixing to coat in the creamy sauce. Cook for an additional 1-2 minutes to heat through.

                Taste and adjust seasoning with salt and pepper if needed.

                  Serve hot, garnished with fresh basil. Enjoy with pasta, rice, or crusty bread!
