Ingredients

1 pound large prawns (shrimp), peeled and deveined

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: 1 teaspoon red pepper flakes for heat

Instructions

Sauté Prawns: In a large skillet, heat olive oil over medium-high heat. Add the prawns and cook for about 2-3 minutes on each side until they are pink and opaque. Remove them from the skillet and set aside.

Create the Sauce: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Then, add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

Add Spinach and Cream: Stir in the chopped spinach and cook for 1-2 minutes until wilted. Lower the heat, then pour in the heavy cream and bring to a gentle simmer.

Combine Ingredients: Add in the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy. Season with salt, pepper, and optional red pepper flakes to taste.

Finish with Prawns: Return the cooked prawns to the skillet and let them heat through for about 2 minutes. Make sure they are well coated in the creamy sauce.

Serve: Garnish with fresh basil leaves. Serve over pasta, rice, or with crusty bread to soak up the delicious sauce.
