4 salmon fillets (6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

2 cups baby spinach

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions
 

Season the salmon fillets with salt and pepper on both sides.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets, skin side down, and cook for about 4-5 minutes, until the skin is crispy. Flip and cook for an additional 3-4 minutes, or until the salmon is cooked through. Remove the salmon from the skillet and set aside on a plate.

      In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, until fragrant.

        Add the cherry tomatoes and cook for about 2-3 minutes, until they begin to soften.

          Stir in the baby spinach and cook until wilted, about 1-2 minutes.

            Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Continue to cook for another 2-3 minutes until the sauce thickens slightly.

              Return the salmon fillets to the skillet, spooning the creamy sauce over the fish. Cook for an additional minute to heat through.

                Garnish with fresh basil leaves before serving.
