8 oz linguine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 cup heavy cream

1 cup spinach, fresh

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Create the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and Italian seasoning, cooking until the tomatoes start to soften, about 3-4 minutes.

        Add Cream and Spinach: Pour in the heavy cream and stir well. Add the fresh spinach and allow it to wilt. Once wilted, mix in the Parmesan cheese until smooth. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

          Combine Pasta and Shrimp: Return the shrimp to the skillet and add the cooked linguine. Toss everything together until the pasta is well-coated in the creamy sauce and all ingredients are heated through.

            Serve: Plate the creamy Tuscan shrimp linguine and garnish with fresh basil leaves. Optional: sprinkle with additional Parmesan cheese before serving.
