1 tablespoon baking powder

3/4 cup whole milk

2 large eggs

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup heavy cream

2 tablespoons brown sugar

1 teaspoon vanilla bean paste (or additional vanilla extract)

Pinch of salt

Additional granulated sugar, for topping

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a donut pan.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until combined.

      Combine Wet Ingredients: In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.

        Combine the Mixtures: Slowly pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.

          Fill the Donut Pan: Use a piping bag or a spoon to fill the donut cavities in your prepared pan about 3/4 full.

            Bake: Bake in the preheated oven for 10-12 minutes or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

              Cool the Donuts: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                Prepare Cream Filling: In a small saucepan over medium heat, combine the heavy cream, brown sugar, vanilla bean paste, and pinch of salt. Stir until the sugar is dissolved and the mixture is warm (do not bring to a boil). Remove from heat and let it cool slightly.

                  Fill the Donuts: Once the donuts are completely cool, use a sharp knife to make a small hole in the side of each donut. Using a pastry bag or a squeeze bottle, carefully fill each donut with the crème brûlée filling.

                    Caramelize the Sugar: To create the brûlée topping, sprinkle a thin layer of granulated sugar over the tops of the filled donuts. Use a kitchen torch to carefully caramelize the sugar until it forms a crispy layer. (If you don’t have a torch, you can place the donuts under the broiler for a few seconds but watch them closely to prevent burning).

                      Serve: Allow the caramelized sugar to cool slightly before serving the donuts.
