Ingredients

1 bunch of fresh asparagus, trimmed

1 cup panko breadcrumbs

1/2 cup grated Asiago cheese

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Olive oil spray

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

In a shallow bowl, combine the panko breadcrumbs, grated Asiago cheese, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix well to distribute all the spices evenly.

In a separate bowl, place the all-purpose flour. In another bowl, beat the eggs until frothy.

Take each asparagus spear, first coat it in the flour, shaking off any excess.

Next, dip the floured asparagus in the beaten eggs, allowing any excess to drip off.

Finally, roll the asparagus in the panko and Asiago mixture, pressing gently to ensure a good coating.

Place the coated asparagus spears on the prepared baking sheet, spaced apart so they can crisp up evenly.

Lightly spray the asparagus with olive oil spray to enhance crispiness while baking.

Bake in the preheated oven for 15-20 minutes or until golden brown and crispy. Keep an eye on them towards the end of baking to prevent burning.

Once done, remove them from the oven and let cool slightly before serving.
