1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

Vegetable oil (for frying)

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 tablespoon honey

1 tablespoon lime juice

Optional garnish: chopped green onions and sesame seeds

Instructions
 

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Add the chicken pieces and stir to coat well. Cover and refrigerate for at least 30 minutes (or up to overnight) to allow it to marinate.

    Prepare the Coating: In two separate bowls, place the flour in one and the panko breadcrumbs in another.

      Dredging Process: Remove the marinated chicken from the fridge. Take each piece, let the excess buttermilk drip off, then coat it in the flour, shaking off any excess. Next, dip it back into the buttermilk before rolling it in the panko breadcrumbs, ensuring it's fully coated. Repeat until all the chicken is coated.

        Fry the Chicken: Heat about 1 to 2 inches of vegetable oil in a deep skillet or pot over medium-high heat (around 350°F/175°C). Carefully add the chicken pieces in batches, being cautious not to overcrowd the pan. Fry until golden brown and crispy, about 5-6 minutes per batch. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

          Prepare the Bang Bang Sauce: In a separate bowl, mix together the mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice until smooth. Adjust the spice level by adding more Sriracha if desired.

            Serve: In a serving bowl, toss the crispy chicken with the Bang Bang sauce until well coated, or serve the sauce on the side for dipping. Garnish with chopped green onions and sesame seeds if desired.
