1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 cup panko breadcrumbs

2 eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon cayenne pepper (adjust based on spice preference)

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust based on spice preference)

1 teaspoon lime juice

Green onions for garnish

Instructions
 

In a large bowl, season the pieces of chicken with garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Toss until evenly coated.

    Set up a dredging station: place the flour in one bowl, the beaten eggs in another, and the panko breadcrumbs in a third bowl.

      Dip each piece of chicken first into the flour, ensuring it’s fully coated; then dip it in the beaten eggs; finally, coat it with panko breadcrumbs to create that crispy exterior. Place the coated chicken on a plate.

        Heat about 1 inch of oil in a deep skillet over medium-high heat until it reaches 350°F (175°C).

          Carefully add the chicken pieces in batches, frying for about 5-7 minutes on each side, or until golden brown and crispy. Make sure not to overcrowd the pan.

            Remove the fried chicken and place it on a paper towel-lined plate to absorb excess oil.

              In a separate bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice to create the Bang Bang sauce. Adjust seasoning if necessary.
