1 pound fresh salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Oil for frying (vegetable or canola)

For the Bang Bang Sauce:

½ cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey (optional)

Chopped green onions for garnish

Prepare the Salmon: Pat the salmon cubes dry with paper towels. This will help the coating adhere better.

    Set Up Breading Station: In one bowl, place the all-purpose flour seasoned with salt, pepper, garlic powder, and paprika. In a second bowl, pour the beaten eggs. In a third bowl, add the panko breadcrumbs.

      Coat the Salmon: Dip each salmon cube first in the flour mixture, shaking off the excess, then into the egg, and finally coat with panko breadcrumbs, pressing gently to adhere. Repeat until all pieces are coated.

        Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and honey. Mix well and adjust the spiciness to your preference.

          Fry the Salmon Bites: Heat about ½ inch of oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the salmon bites in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
