2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup corn (fresh, frozen, or canned, drained)

1/2 cup black beans, rinsed and drained

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

12 small corn tortillas

Oil for frying

Fresh cilantro (for garnish)

Salsa and sour cream (for serving)

Instructions
 

In a large bowl, combine the shredded chicken, cream cheese, cheddar cheese, corn, black beans, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix until all ingredients are well incorporated.

    In a skillet over medium heat, warm the corn tortillas for about 30 seconds per side to make them pliable.

      Take a warmed tortilla, scoop about 2 tablespoons of the chicken mixture onto one end, and roll it tightly. Repeat with the remaining tortillas and filling.

        In a large skillet, heat enough oil to cover the bottom over medium-high heat. Once hot, carefully add the rolled taquitos, seam side down.

          Fry the taquitos for about 3-4 minutes on each side or until they are golden brown and crispy. Remove from the oil and place them on a paper towel-lined plate to absorb excess oil.

            Serve the crispy taquitos hot, garnished with fresh cilantro, and alongside salsa and sour cream for dipping.
