1.5 pounds baby potatoes, halved

1/4 cup olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the halved baby potatoes, olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper. Toss well to ensure the potatoes are evenly coated.

      Spread the coated potatoes in a single layer on the prepared baking sheet.

        Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, flipping them halfway through cooking for even crispness.

          Once the potatoes are crispy, remove them from the oven and sprinkle the grated Parmesan cheese on top.

            Return the baking sheet to the oven for an additional 5 minutes, allowing the cheese to melt and become slightly golden.

              Remove from the oven and let the potatoes cool for a few minutes before garnishing with fresh parsley.
