Ingredients

For the Chicken:

1 lb chicken thighs, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

Oil, for frying

For the Hot Honey Sauce:

1/2 cup honey

2 tbsp hot sauce (like Frank’s or Sriracha)

1/2 tsp cayenne pepper (optional, for extra heat)

1 tbsp apple cider vinegar

1/2 tsp garlic powder

1/2 tsp smoked paprika

Optional garnish: chopped fresh parsley or sesame seeds

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk and a pinch of salt. Add the chicken thighs, ensuring they are fully submerged in the buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Flour Mixture: In another bowl, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper until well combined.

Dredge the Chicken: Remove the marinated chicken from the refrigerator. Shake off the excess buttermilk and coat each piece in the flour mixture, pressing slightly to adhere the flour.

Fry the Chicken: In a large skillet or deep fryer, heat oil over medium-high heat (about 350°F or 175°C). Fry the chicken pieces in batches, without overcrowding the pan, for about 6-8 minutes per side or until golden brown and cooked through. Drain on a paper towel-lined plate.

Make the Hot Honey Sauce: While the chicken is frying, prepare the hot honey sauce. In a small saucepan over medium heat, combine honey, hot sauce, apple cider vinegar, garlic powder, smoked paprika, and cayenne pepper (if using). Stir until the mixture is well combined and heated through, about 2-3 minutes. Remove from heat.

Glaze the Chicken: Once the chicken is fried, drizzle the hot honey sauce generously over the crispy chicken. Toss to coat if desired or serve the sauce on the side.

Serve: Transfer the chicken to a platter and garnish with chopped parsley or sesame seeds if desired. Enjoy your sweet and spicy crispy hot honey chicken!
