1 lb (450g) boneless, skinless chicken thighs (cut into 1-inch pieces)

2 tablespoons olive oil

Zest and juice of 1 large lemon

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (preferably panko for extra crunch)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, chopped thyme, paprika, salt, and pepper. Whisk together until well blended.

    Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes, preferably 1 hour for maximum flavor.

      Preheat your grill or oven to 400°F (200°C). If grilling, oil the grill grates to prevent sticking.

        While the grill is heating, take the marinated chicken out and thread them onto skewers, leaving a little space between each piece for even cooking.

          Place the breadcrumbs on a shallow plate. Carefully roll each chicken skewer in the breadcrumbs until well coated.

            Place the skewers on the preheated grill or a baking sheet if using the oven. Cook for about 15-20 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).

              Remove from heat and let rest for a few minutes before serving.
