4 large russet potatoes

1 cup shredded cheddar cheese

1 cup cooked ground beef

1/2 cup sour cream

1/4 cup milk

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

Salt and pepper to taste

1 cup breadcrumbs

Vegetable oil for frying

Prepare the Potatoes: Peel and cut the potatoes into quarters. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes: Drain the potatoes and return them to the pot. Add sour cream, milk, garlic powder, salt, and pepper. Mash until smooth and creamy. Set aside to cool slightly.

      Prepare the Filling: In a bowl, mix the cooked ground beef with half of the cheddar cheese and green onions. Season with salt and pepper to taste.

        Stuff the Potatoes: Once the mashed potatoes are cooled enough to handle, scoop about 1/4 cup of the mixture into your hands, flatten it into a pancake shape, and place a spoonful of the beef and cheese mixture in the center. Carefully fold the potatoes around the filling to form a ball. Repeat until all mash and filling are used.

          Coat the Balls: Roll each stuffed potato ball in breadcrumbs until fully coated.

            Fry the Stuffed Potatoes: Heat vegetable oil in a deep skillet over medium heat. When the oil is hot, carefully add the potato balls in batches. Fry until golden brown and crispy, about 4-5 minutes on each side. Remove and drain on paper towels.

              Serve: Place the crispy mashed potato balls on a serving platter and top with the remaining cheddar cheese. Serve warm.
