8 small corn tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/4 cup cream cheese, softened

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon chili powder

2 tablespoons fresh cilantro, chopped (for garnish)

Olive oil or cooking spray (for frying)

Salsa and sour cream (for serving)

Instructions
 

In a mixing bowl, combine the mozzarella, cheddar, and cream cheese. Add the garlic powder, onion powder, and chili powder. Mix until well combined.

    Heat a non-stick skillet over medium heat. Lightly brush it with olive oil or spray with cooking spray.

      Place one corn tortilla in the skillet and spread about 2 tablespoons of the cheese mixture evenly on half of the tortilla.

        Fold the tortilla over to create a half-moon shape. Cook for about 2-3 minutes until the bottom is golden brown and crispy.

          Carefully flip the quesadilla and cook the other side for another 2-3 minutes, until it's also golden brown and the cheese has melted.

            Remove the quesadilla from the skillet and place it on a paper towel-lined plate to absorb excess oil. Repeat the process with the remaining tortillas and cheese mixture.

              Slice each quesadilla into quarters and garnish with chopped cilantro.
