Ingredients

4 boneless, skinless chicken breasts

1 cup crushed Ritz crackers (about 2 sleeves)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 cup all-purpose flour

2 large eggs

1/4 cup milk

Cooking spray or olive oil for drizzling

Instructions

Preheat Oven: Start by preheating your oven to 400°F (200°C).

Prep the Coating: In a large bowl, combine the crushed Ritz crackers, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt. Mix well and set aside.

Dredging Station: In another bowl, set up your dredging station: place the all-purpose flour in one shallow dish, and in a separate bowl, whisk together the eggs and milk.

Prepare Chicken: Take each chicken breast and gently pound it to an even thickness (about 1 inch) to ensure even cooking.

Coat Chicken: First, coat each chicken breast in the flour, shaking off any excess. Next, dip it into the egg mixture, allowing any excess to drip off, then finally coat it generously with the Ritz cracker mixture, pressing lightly to ensure it adheres well.

Arrange for Baking: Spray a baking sheet with cooking spray or lightly drizzle with olive oil. Arrange the coated chicken breasts on the prepared baking sheet, keeping space between each piece.

Bake: Lightly spray the top of the chicken breasts with cooking spray or drizzle with a little olive oil to achieve a golden crust. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F) and the coating is crispy and golden brown.

Serve: Remove from the oven and let rest for a few minutes. Serve hot with your favorite dipping sauce or alongside a fresh salad or roasted vegetables.
