Ingredients

1 large head of cauliflower, cut into florets

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon dried oregano

½ teaspoon red chili flakes (optional for a spice kick)

¼ cup grated Parmesan cheese (optional, for a cheesy flavor)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.

Prepare the cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, minced garlic, smoked paprika, sea salt, black pepper, oregano, and red chili flakes (if using). Toss well until the cauliflower is evenly coated in the seasoning.

Spread on the baking sheet: Arrange the seasoned cauliflower in a single layer on the prepared baking sheet, making sure not to overcrowd the pan. This will help them roast evenly and get crispy.

Roast the cauliflower: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the florets are golden brown and crispy. Make sure to flip the cauliflower halfway through the cooking time for even browning.

Add Parmesan (optional): If you chose to use Parmesan cheese, sprinkle it over the cauliflower during the last 5 minutes of roasting, allowing it to melt and become crispy.

Garnish and serve: Once done, remove the cauliflower from the oven, transfer it to a serving dish, and sprinkle with fresh chopped parsley. Serve with lemon wedges on the side for a zesty touch.
