1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

1/2 cup cornstarch

1 large egg, lightly beaten

1 cup cold sparkling water (or club soda)

1/2 tsp baking powder

1/2 tsp salt

Vegetable oil, for frying

Optional: Shredded vegetables (like sweet potatoes, zucchini, or bell peppers) for tempura

Dipping sauce (soy sauce, ponzu, or a homemade tempura dipping sauce)

Instructions
 

Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. Season them lightly with salt and set aside.

    Make the Tempura Batter: In a large mixing bowl, combine the flour, cornstarch, baking powder, and salt. Lightly whisk to blend. Create a well in the center and add the beaten egg. Gradually pour in the cold sparkling water while gently stirring with chopsticks or a fork. Mix until just combined; the batter should be lumpy, not smooth.

      Heat the Oil: In a deep pot or heavy skillet, heat about 2 to 3 inches of vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

        Fry the Shrimp: Dip each shrimp into the batter, making sure it’s fully coated, and gently drop it into the hot oil. Do not overcrowd the pot. Fry in batches for about 2-3 minutes or until they turn golden brown and crispy. If using additional veggies, repeat the process.

          Drain: Use a slotted spoon to remove the shrimp from the oil and transfer them to a plate lined with paper towels to absorb excess oil.

            Serve: Arrange the crispy shrimp tempura on a serving platter. Serve hot with your favorite dipping sauce and enjoy the crunch!
