3 cups green cabbage, finely shredded

1 cup carrots, grated

1/2 cup all-purpose flour

1/2 cup cornstarch

1 large egg, lightly beaten

1 teaspoon baking powder

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Oil for frying (such as vegetable or canola)

For the Garlic Sauce:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

In a large mixing bowl, combine the shredded cabbage and grated carrots. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.

    After 10 minutes, squeeze the cabbage and carrot mixture gently to remove excess water, then transfer to a clean bowl.

      In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, onion powder, garlic powder, black pepper, and remaining salt.

        Add the dry ingredients to the cabbage and carrot mixture along with the beaten egg. Mix well until everything is combined and forms a thick batter. If the batter feels too loose, add a little more flour until it can hold its shape.

          Heat oil in a deep skillet over medium-high heat until shimmering. Use a tablespoon or cookie scoop to drop small portions of the batter into the hot oil, pressing them down slightly to flatten.

            Fry the fritters for 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

              For the garlic sauce, combine the mayonnaise, minced garlic, and lemon juice in a small bowl. Mix well and season with salt and pepper to taste.

                Serve the crispy cabbage fritters warm with a side of garlic sauce for dipping.
