Crispy Zucchini Fritters

Ingredients
  

2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 large egg, beaten

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Vegetable oil for frying

Instructions
 

Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for about 15 minutes to draw out excess moisture.

    After 15 minutes, use a clean kitchen towel or paper towels to squeeze the grated zucchini and remove any remaining moisture.

      In a mixing bowl, combine the drained zucchini, flour, Parmesan cheese, parsley, beaten egg, black pepper, and garlic powder. Mix until well combined.

        In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.

          Once the oil is hot, spoon about 2 tablespoons of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon to form fritters.

            Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove them and place on a paper towel-lined plate to absorb excess oil.

              Repeat until all the mixture is cooked, adding more oil as necessary.

                Serve warm, optionally with a dollop of sour cream or yogurt on the side for dipping.
