Crock Pot Beef Tips and Gravy

Ingredients
  

2 pounds beef tips (chuck or sirloin)

1 medium onion, diced

3 cloves garlic, minced

2 cups beef broth

1 cup mushrooms, sliced

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Brown the Meat: Heat olive oil in a skillet over medium-high heat. Season beef tips with salt and pepper. Add them to the skillet in batches, browning on all sides. Transfer the browned beef tips to the Crock Pot.

    Sauté Vegetables: In the same skillet, add the diced onion and garlic. Sauté for about 3-4 minutes until they're soft and fragrant. Add them to the Crock Pot as well.

      Add Remaining Ingredients: Pour in the beef broth, Worcestershire sauce, soy sauce, dried thyme, and rosemary into the Crock Pot. Stir to combine. Add the sliced mushrooms on top.

        Cook Slowly: Cover the Crock Pot and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the flavors meld together.

          Thicken the Gravy (Optional): If you prefer a thicker gravy, mix cornstarch with 2 tablespoons of cold water in a small bowl until smooth. Stir this mixture into the Crock Pot during the last 30 minutes of cooking.

            Serve: Once cooked, stir the beef tips and gravy to combine. Adjust seasoning with salt and pepper as needed. Garnish with fresh chopped parsley before serving.
