1 pound boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

2 cups heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for heat)

1 cup cooked pasta (like small shells or elbow macaroni)

Fresh basil leaves, for garnish

Salt and black pepper to taste

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of the crock pot. Season them with salt, black pepper, and half of the Italian seasoning.

    Add Aromatics: Spread the diced onions and minced garlic over the chicken. This will ensure their flavors infuse into the meat as it cooks.

      Pour in Broth and Tomatoes: Add the chicken broth and the undrained diced tomatoes to the pot. Stir gently to combine.

        Season the Mixture: Sprinkle in the remaining Italian seasoning and red pepper flakes if using. Give the mixture a gentle stir to incorporate the spices.

          Set the Crock Pot: Cover the crock pot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and easily shredded.
