1 tablespoon olive oil

1 pound Italian sausage (mild or spicy), casings removed

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

2 cups diced tomatoes (canned or fresh)

2 cups fresh spinach (or kale)

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon red pepper flakes (optional, for spice)

1 package (9 oz) refrigerated cheese tortellini

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

In a skillet over medium heat, add the olive oil. Once hot, add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes. Then, stir in the minced garlic and cook for another minute until fragrant.

      Transfer the browned sausage mixture into the crockpot. Pour in the chicken broth and diced tomatoes, followed by the dried oregano, dried basil, and red pepper flakes if using. Stir well to combine.

        Cover the crockpot and cook on low for 6-7 hours, or on high for 3-4 hours.

          About 30 minutes before serving, add the cheese tortellini and spinach (or kale) to the crockpot, stirring gently to incorporate. Season with salt and pepper to taste.

            Once the tortellini are cooked (3-5 minutes on high), serve the soup hot.
