2 lbs chicken breast, boneless and skinless

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies, undrained

1 medium red onion, diced

1 red bell pepper, diced

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup chicken broth

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

Begin by placing the chicken breasts at the bottom of the crockpot.

    In a mixing bowl, combine the black beans, corn, diced tomatoes (with juices), red onion, and red bell pepper. Mix well.

      Add the chili powder, cumin, garlic powder, onion powder, salt, and pepper to the bowl of vegetables. Stir until evenly coated with the spices.

        Pour the vegetable mixture over the chicken in the crockpot.

          Add the chicken broth and the lime juice, ensuring the chicken is submerged in the liquid.

            Cover the crockpot with the lid and set it to low heat for 6-7 hours or high heat for 3-4 hours.

              Once cooked, shred the chicken in the crockpot using two forks, mixing it well with the surrounding ingredients.

                Let the chicken soak up the flavors for an additional 15 minutes on warm before serving.

                  Serve the Southwest Chicken in bowls, garnished with fresh cilantro.
