½ cup unsweetened cocoa powder

1 cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

¼ teaspoon salt

1 cup chocolate chips (dark or semi-sweet)

½ cup mini marshmallows (optional for a gooey texture)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. You can use an electric mixer on medium speed for this (about 3-4 minutes).

        Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

          Gradually incorporate the dry ingredient mixture into the wet mixture until combined, making sure not to overmix.

            Fold in the chocolate chips gently. If you're using mini marshmallows, fold those in as well for an extra gooey texture.

              Using a cookie scoop or tablespoon, drop rounded balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

                Bake in the preheated oven for 10-12 minutes. The edges should look set, but the centers may look slightly underbaked (they will firm up as they cool).

                  Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
