Instructions
Start by preparing the cucumbers. Wash and dice them into bite-sized pieces, placing them in a large mixing bowl.
Add the halved cherry tomatoes to the bowl with the cucumbers.
Sprinkle the crumbled feta cheese over the cucumber and tomato mixture.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the dressing.
Pour the dressing over the salad and gently toss everything together using a large spoon until well combined.
Add the finely chopped red onion and fresh mint leaves, once again gently tossing to mix.
Taste and adjust seasoning with more salt or pepper if necessary.
Chill the salad in the refrigerator for about 15-30 minutes before serving to enhance the flavors.
Notes
Serve the salad in a rustic wooden bowl, garnished with extra mint leaves and a sprinkle of feta on top for a fresh look.
