Ingredients
  

2 large cucumbers, diced

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

1 cup fresh mint leaves, roughly chopped

1 tablespoon honey

3 tablespoons apple cider vinegar

2 tablespoons olive oil

Salt and pepper to taste

Feta cheese, crumbled (optional)

Instructions
 

In a large mixing bowl, combine the diced cucumbers, cherry tomatoes, and red onion.

    Add the chopped mint leaves to the bowl, reserving a few for garnish later.

      In a small bowl, whisk together the honey, apple cider vinegar, olive oil, salt, and pepper until well blended.

        Pour the dressing over the cucumber mixture and toss gently to combine.
