Dark Chocolate Pastry Delight

1 sheet of puff pastry, thawed

200g dark chocolate (70% cocoa), chopped

100ml heavy cream

2 tablespoons sugar

1 teaspoon vanilla extract

Sea salt flakes for garnish

Fresh berries (raspberries or strawberries) for serving

Instructions
 

Preheat your oven to 200°C (400°F).

    Roll out the thawed puff pastry on a lightly floured surface to smooth any creases. Cut into 4 equal squares.

      Place 50g of chopped dark chocolate in a small bowl. In a saucepan, heat the cream with sugar until just boiling, then pour it over the dark chocolate. Let it sit for a minute, then stir until melted and smooth. Add the vanilla extract.

        Spoon a generous amount of the chocolate mixture into the center of each pastry square, leaving a small border around the edges.

          Fold the corners of the pastry over the filling to create a rustic shape, pinching the edges to seal.

            Place the pastries on a baking tray lined with parchment paper. Brush the tops with a little water or beaten egg for a golden finish.

              Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden brown.

                Remove from the oven and let cool slightly. Sprinkle with sea salt flakes.

                  Serve warm or at room temperature, garnished with fresh berries on the side.
