Ingredients
  

4 salmon fillets (6 oz each)

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup cherry tomatoes, halved

3 cups fresh spinach

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh basil or parsley for garnish

Instructions
 

Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.

    Sear the Salmon: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, carefully place the salmon fillets, skin-side down, and sear for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes until just cooked through. Remove the salmon from the skillet and set aside on a plate.

      Make the Garlic Butter Sauce: In the same skillet, melt 4 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Add Cream and Veggies: Pour in the heavy cream and stir well. Add in the halved cherry tomatoes and fresh spinach, cooking until the spinach is wilted and the tomatoes are softened, around 2-3 minutes.

          Incorporate Cheese and Seasoning: Stir in the grated Parmesan cheese and Italian seasoning. Mix until the cheese is melted and the sauce is creamy. Taste and adjust seasoning with salt and pepper as needed.

            Combine with Salmon: Gently place the seared salmon back into the skillet, spooning some of the creamy sauce over the top. Allow it to simmer for about 2 minutes, ensuring the salmon absorbs some flavors.
